How We’re Handling Hallowe’en

Ok, in an ideal world, we’d be perfectly GFCF all the time. Heck, we’d be dye free & soy free & high fructose corn syrup free too.
I live in “work 35 hours, drive 5 hours, church on Sunday, errands on Saturday, crazy busy life” world. So, that means we make some compromises. [...]

Chicken Pasta

Here’s a great new recipe for you.  This is almost as easy as opening up a boxed dinner, which is perfect for those harried weeknight suppers.  Keep in mind that quantities are approximate, you can add more or less, depending on the number of people you are feeding.
Chicken Pasta
2-3 chicken breasts
1 Tbsp olive oil
1 Tbsp [...]

I Like OLE!

I never did get the OLE (Olive Leaf Extract) into Nathan yet, I tried opening up the capsule & that is some foul-tasting supplement!!  Kinda like green seaweed, so I am going to have to find something pretty strong to mix it in or that one will be a no-go for him.
However, for me, the [...]

Yeast Update (#3?)

I cut off Nathan’s yeast treatment Thursday because I thought we had that baby licked, but today his screechy voice has returned.  The more excited he gets the more screechy he is.  Yikes.
So, I’ve dropped 2 more GSE in his juice & I ordered some No-Fenol from Houston Enzymes.  I wonder if he is going [...]

Sloppy Joes on Brown Rice

Here’s a new creation I came up with today for lunch. I actually enjoyed it as much as Sloppy Joes on bread.  The trick with GFCF is that you don’t have to “substitute”.  You can find something better.
Sloppy Joes
1 cup Brown rice
2 cups water
1 lb ground beef
1 Tbsp minced garlic (in a jar)
1 tsp oregano
1 [...]

Yeast Solved?

I cut off Nathan’s GSE today, he’s been on it now for 6 full days & that seemed like a good trial of the supplement. I am worried about creating a bacteria problem if I treat for yeast that isn’t there. I have been attempting to source Biotin, as recommended, but so far [...]

GSE Update

I’m hesitant to update today, because I am not sure if we are seeing any changes in Nathan or not. Yesterday we was quite moody, easily brought to tears & meltdowns. He also peed his pants, which he hasn’t done in over a year. So that was weird.
His “volume control” seems to [...]

Crayola Model Magic Fusion

If you don’t know, Play-doh is a No-No if you are gluten free.  Why?  It is made with wheat & there is a possibility of our kids eating it, absorbing it through the skin or transferring their unwashed hands to the mouth & then ingesting small particles.
One alternative is Crayola Model Magic Fusion.  We bought [...]

Vitamins, Minerals, Supplements Oh My

Let me start by saying I am convinced that this diet is working. I just don’t think it is doing enough. Nathan has made some huge gains in speech, behaviour & concentration but his voice…that pitch is enough to send me off to a padded room & don’t even get me started on [...]

Turkey Day

Happy Turkey Day (late) to my fellow Canadians. Where was I? At home, eating the turkey. Seriously, if there is food to be had, I’m there, not blogging about it on the computer.
So, how did we make a GFCF Thanksgiving that everyone could enjoy? Pretty simple actually. Our traditional Turkey [...]
