Vanilla Cupcakes with Strawberry Icing

Psst. Have you heard the rumor that “vanilla” or “white” cake is impossible on the GFCF diet? Not true my friends, not true. You too can make a lovely white cake.

No, it isn’t paper white, like a bakery, more like a light yellowy-cream. But, to me that’s a white cake. So here’s the recipe:

Vanilla Cupcakes

2 cups GF flour
2 tsp xanthan gum (don’t skip!)
1 1/2 cups sugar
1 tsp salt
3 1/2 tsp baking powder
1/2 cup shortening (CF margarine also works, may produce a slightly more ‘yellow’ cupcake)
1 cup GFCF milk (we used vanilla almond milk – yum!)
1 tsp GFCF vanilla
3 eggs

Heat oven to 350. Measure all ingredients into a bowl. Blen about 30 seconds on low, scraping bowl. Beat 3 minutes on high speed until well blended.

Spoon into cupcake papers & bake about 15-20 minutes or until a toothpick inserted comes out clean. Let cool and frost. Makes between 18-24 cupcakes.

Strawberry Icing
2 cups powdered sugar
1/4 cup CF margarine
1 tsp vanilla
splash of milk (sub)
3-4 frozen strawberries, heated in microwave about 40 seconds & then mash
Beat together until smooth and thick. You can add additional sugar to thicken or a touch more milk to thin. If you don’t want strawberry bits in your icing, you’ll have to just use the juice, no fruit. We like it with the fruit and juice. Makes a light pink coloured icing, you could add more berries for deeper colour and flavour. 3-4 will produce pink without any “berry” taste.  (Or food colouring!)

    When you say GFCF flour here… are you using a GF flour mix (like bobs red mill) or something like rice flour?

    A GF flour blend, like Bette Hagman’s is good. 2 cups rice flour, 2/3 cup potato starch, 1/3 cup tapioca starch – blend, then measure out enough for recipe
