Here’s a new creation I came up with today for lunch. I actually enjoyed it as much as Sloppy Joes on bread. The trick with GFCF is that you don’t have to “substitute”. You can find something better.
1 cup Brown rice
2 cups water
1 lb ground beef
1 Tbsp minced garlic (in a jar)
1 tsp oregano
1 tin tomato paste (and 2 tins of water)
1 can brown beans
1/3 cup ketchup (to taste, more or less)
Add brown rice to water, bring to a boil. Put lid on pot, turn down to simmer. Set timer and ignore for 50 minutes.
Brown ground beef, add garlic, oregano and any other spices your family likes. Add tomato paste, two tins of water, brown beans and ketchup. Simmer at least 15 minutes. This should be the consistency of thick spaghetti sauce, add water if necessary.
When the timer goes off, turn heat off rice, let it sit for 10 minutes. Fluff with a fork. Serve Sloppy Joes over the rice.
