We are a cookie loving bunch and it is so hard to find a good GFCF recipe. Of course, I might just make the world’s greatest gluten-filled chocolate chip cookie, so the GFCF ones have a big reputation to live up to. I have tried more than a dozen recipes, even trying to convert the original.
The fact is, no cookie is going to taste like the original. But these are still awesome. Even better than that, the recipe uses oil, so there is no question of your fat being questionably CF.
These are a soft, moist cookie made better by replacing part of the oil with (organic) unsweetend applesauce. Bonus points if you make your own from the apples hanging in your (pesticide free) apple tree.
The Best GFCF Chocolate Chip Cookie
1 1/3 cup GF flour blend
4 Tbsp cornstarch
2 Tbsp sorghum flour*
3/4 tsp baking soda
3/4 tsp xanthan gum
3/4 tsp salt
1/3 cup oil
1/2 cup applesauce **
1/2 cup brown sugar
1/2 cup white sugar
1 1/2 tsp vanilla
1 cup chocolate chips
Blend all your dry ingredients. Add egg, oil, applesauce and vanilla. Blend thoroughly. Add chocolate chips and blend again. The dough is pretty thick and hard to stir. Roll into balls, press down slightly and bake for 8 minutes at 375 degrees. Let sit on the pan for a few minutes & then transfer to a cooling rack.
*I think the sorghum is responsible for giving this recipe a better taste. You can sub potato starch but it isn’t quite as good.
** You may need to play with the amount of applesauce/oil. This is the combo I like best, but some prefer more oil and less applesauce.
